To answer the first question: All of the cell lines are mouse embryonic fibroblast (fibroblast-like). This is where the term MEF (murine embryonic fibroblast) comes from. NIH 3T3 was established from an NIH Swiss mouse embryo (Swiss3T3). As for how the cell lines are different I suggest you do a MEDLINE search of studies that used the cell lines for inhibition and activation studies. I am not certain what differences would be of the most importance to you.
To answer your second question: I am not sure what paper you are referring to, but other researchers have grown NIH 3T3 in FCS as well as CS. Fetal calf serum can contain some growth or differentiation factors that are not found in calf serum derived afterbirth. Perhaps the researchers in your paper were trying to avoid the addition of these. To answer your third question: many cell lines can survive serum deprivation for short periods of time. if the paper noted that the cells perished after 1 day, you may want to check how you switched the cells over to 0% serum media. it is possible that some residual media containing serum was left behind.
