Fersht Structure and Mechinism in Protein Science</a> Good on secondary structures, and enzyme structure and enzyme kinetics, covers the hydrophobic effect well and discusses how protiens fold. Also covers what you're asking for in terms of circular dichromism.

Real-Time Analysis of Biomolecular Interactions: Applications of Biacore </a> Is what you want for looking at protein-protein interactions.
